She’s already got Chinese restaurant MiMi Mei Fair and Indian spots Jamavar and Bombay Bustle to her name and now Samyukta Nair is taking on Japanese food with her latest opening KOYN. Coming to Mayfair in September, KOYN will be inspired by the duality of Mount Fuji and the balance of modernity with tradition. The two-storey space will be divided into two distinct areas; Midori, a green room on the ground floor representing the life on the peak with Magma, representing an active volcano, below.
As well as decor inspired by Japanese zen gardens and lots of green leather, Midori will feature a marble sushi bar with an illuminated mirror skyscape, serving up dishes like native lobster tempura sushi roll with chargrilled red pepper & yuzu lemon and applewood-smoked A5 wagu roll with asparagus & black truffle. Downstairs, Magma, with its black timber, burnt orange leather and terracotta sculpture wall, will have a robata grill as its heart, where you’ll be able to get hojicha-smoked lamb with spicy kuromame miso, hispi cabbage grilled with homemade koji dressing, wagyu ishiyaki with yakiniku sauce served on a sizzling hot stone.
Alongside the sushi and robata sections, Exec Chef Rhys Cattermoul (ex-Nobu) will also be dishing up the likes of steamed clams ‘nabe’ with cordycep mushroom & yuzu sake soy and red mullet tempura with yuzu kosho tosazu & homemade kombu salt, and as with all Samyukta Nair restaurants you can bet the food will look as impressive as the interiors.
