    Blue Mountain School, the cultural space in Shoreditch run by James and Christie Brown, is welcoming new restaurant Cycene into the building, taking over the townhouse’s ground floor and the first floor rooms where previous restaurant Mãos used to live. Meaning ‘kitchen’ in Old English, Cycene will mirror the intimate vibe of Blue Mountain School, which exhibits one-of-a-kind collections of art, ceramics, garments and furniture during the day, making you feel like you’re having dinner in a private home, albeit one with a state-of-the-art kitchen complete with meat and fish aging chambers and fermentation lockers. Theo Clench (ex-Akoko and Portland) will be heading up the kitchen, with a ten-course menu that draws on East Asian and Australasian influences and his love of seafood.

    Evenings will start at the bar with snacks served alongside aperitifs, with guests then going upstairs into the kitchen where the second course will be served behind the pass. Then it’s onto the 16-cover dining room for the rest of the courses, like Carlingford oyster with cucumber & caviar; mackerel with plum, shiso & dashi; slow-cooked turbot with lettuce sauce, sake & caviar; and bread with house-made seaweed, fermented shiitake & salted cultured butters.

    James Brown will be curating the wine list, which’ll feature low-intervention bottles, and there will also be a short cocktail list and house-made soft drink pairing flights to choose from as well, so all you people off the sauce can still get something special with your dinner.
