Restaurant Samyukta Nair will debut Koyn Thai next month in collaboration with Bangkok-born chef Rose Chalalai Singh.
Koyn will debut in London’s Mayfair in September 2022 as a modern Japanese izakaya restaurant.
Starting June 16th, Koyn Thai will operate in the downstairs area of Koyn Japanese, presenting a menu that combines Singh’s authentic Thai cuisine with the cafe atmosphere of the 11th arrondissement of Paris, where he used to work.
The menu features dishes inspired by the flavors of different regions of Thailand, such as roasted coconut pomelo salad, wild garlic, green chili and Thai basil “escargots”, and a Chiang Mai platter that showcases spicy house-made pork sausage, paprika yum. prik, sticky rice and crackling pork.
For the design, Nair has collaborated with Tom Strother of Fabled Studio to combine the works of Chiang Mai artist and printmaker Kitikong Tilokwattanotai. This integration complements features such as black oak ceilings, handmade terracotta roof tiles and lacquered antiques.
Meanwhile, the Koyn bar offers a range of drinks, including classics such as the Sabai Sabai, made with Mekong, citrus and Thai basil, and the Blue Breeze, which features blue butterfly pea tequila, coconut water and aloe vera. .
Nair said: “Koyn’s cosmos has always focused on duality and Koyn Thai is an exciting addition that takes this a step further. Traveling with Rose, eating together and finding inspiration that celebrates the diverse flavors of Asian cuisine are at the forefront of our collaboration, and something I’m particularly excited to bring to London this summer.”
Singh added: “I’m excited about my new home at Koyn Thai in Mayfair and the opportunity to come to London and collaborate with Sam with the best of my knowledge – a great spirit and the best Thai flavours.”
Nair has also led the launch of restaurants such as Jamavari, Mimi Mei Fair and Socca in partnership with Claude Bos, all located in London’s Mayfair.
