Cornish Bakery puts sights on expansion to over 400 UK sites

Cornwall’s Cornish bakery from a small fishing village has grown from a modest beginnings to a nationwide success. Originally focused on tourist destinations, the brand has since expanded its dimension to the streets, retail centers, motorway service stations and large venues such as Birmingham’s NEC.

The Cornish bakery has 66 seats throughout the United Kingdom and is actively continuing to expand and advances especially to the main street sites. “There we see the real growth opportunity,” said Mat Finch, CEO.

To support its ambitious growth plans, Cornish Bakery has appointed Jeremy Smith as the first real estate director. Jeremy has more than three decades of experience in purchasing real estate and managing real estate and has been proven to scaled large retail brands. During his six-year term in FatFace, he helped to expand its business from 70-181 store-mirring Cornish Bakery’s own coastal heritage. He later led national deployment in Crew Clothing and served as a group real estate director for five years in Mothercare.

Most recently, Jeremy was a real estate manager in the works, watching 500 stores’ portfolios. His appointment is represented by a significant step in Cornish Bakery’s expansion strategy. He focuses closely with CEO Mat Finch’s CEO Mat Finch, concentrating on securing leases in carefully selected destinations to increase the continuous growth of the brand throughout the UK.

Cornish Bakery’s CEO Mat Finch said: “Consulting has confirmed our belief that” the bakery is a new café “that confirms that there is a significant opportunity to grow Cornish bakeries. Customers are increasingly looking for food that is not wrapped in plastic, looking for something that is tasty and just baked. The fact that Jeremy joins us on our journey at this key phase to lead accusations in our extension. “

Cornish Bakery has prioritized continuous menu innovations to meet the growing demand and to maintain its edges in a competitive market. Recent new additions include apple crushing, raspberry -crème brûlée pastries, feta and pea tortilla, and distinctive hazelnut pain au chocolat -all designed to raise and gratify the bakery.

Under the leadership of Mat Finch, Cornish Bakery has maintained a strong pace, achieved by 9% similar growth at the beginning of 2025 and by submitting record performances during Easter and May Bank holidays. Much of the market crosses the brand has also secured the place in the top 100 lists of the UK dealers.
