June’s wet weather may have delayed the British strawberry harvest by a couple of weeks, but just in time for Wimbledon, Britain’s favorite berry is making its annual comeback. Because of this delay, shoppers can expect to see bigger and sweeter strawberries this year, offering endless possibilities for sweet summer treats.
To celebrate, Sophie Nahmad, lead recipe developer at recipe box delivery service Gousto, has shared her controversial Eton Mess recipe, which she promises will boost the sweetness of the strawberries and bring ‘Swicy’ to your Wimbledon watch party. The ‘Swicy’ flavor trend heating up the food scene in 2024 mixes sweet and spicy ingredients with the adventurous spirit of classic dishes like this seriously hearty Eton Mess.
Tajín Strawberry & Peach Eton Mess and Vanilla Hot Honey
“Tajín, a Mexican spice blend of lime, chili and salt, is the perfect ingredient for a classic Eton mess because by adding subtle heat, the chili enhances the natural sweetness of the strawberries,” explains Sophie.
“Macerate chopped strawberries and peaches in a Tajín and sugar for a more melt-in-the-mouth combination. Homemade vanilla bean hot honey adds a little sweetness and spiciness as another layer to this spectacular dessert.

Ingredients (2 servings)
200 g of strawberries
1 peach
2 tsp Tajín + a little extra dip
1 tsp sugar + a little extra for dipping
2 tablespoons of honey
1 vanilla pod
A pinch of chili powder
150 ml of double cream
1 teaspoon powdered sugar
2 meringue nests
Method
Chop most of the fruit into bite-sized pieces and set aside 2 halved strawberries and a sliced peach for garnish
Combine the chopped strawberries and peaches with the Tajín and sugar, mix well and set aside to macerate
Scoop out the seeds from the vanilla bean and add half of the seeds to a small saucepan with honey and chili powder
Bring to the boil and cook for 1-2 minutes or until fragrant, then set aside to cool – this is your vanilla hot honey
Combine the double cream and icing sugar with the remaining vanilla seeds and beat until soft peaks form – this is your chantilly cream
Build the Eton mess: spoon the fruit into the bottom of a glass or bowl with the Chantilly cream and crumble over the meringue. Alternate fruit, cream and meringue until the bowl or glass is full – this is Tajín’s Strawberry Peach Eton Mess
Dip the halved strawberries and peach slices in a little sugar, then a little Tajín and fill your Eton mess with them
