A spicy lamb burger with halloumi and chilli jam will warm up those December nights, but there’s something else which makes it an extra special meal.

Spicy lamb burger with halloumi and chilli jam
Topped with grilled halloumi and chilli jam, this recipe makes two double patty burgers, or four single burgers – approximately 800 calories per serving (or 600 calories if served as a single patty).
Ingredients:
- 400g lamb mince
- One egg
- 120g reduced-fat halloumi (sliced)
- Brioche burger buns
- Three tsp American Chip Spice
- One tsp chilli flakes
- Half tsp cumin
- Half tsp cayenne pepper
- Half tsp black pepper
- Four tbsp chilli jam
Method
- Mix the lamb mince, egg and seasonings in a bowl until combined. Split into four equal portions, roll into a ball then flatten to make a patty.
- Grill or pan-fry the patties for 8-10 minutes until fully cooked through.
- Whilst the burgers are cooking, grill the halloumi and toast the brioche buns.
- Once everything is cooked, simply construct the burger with the halloumi and chilli jam, then add salad to serve.
