Breakfast pancakes with bacon and avocado Prescription
Dose 6 | Prepare for 10 minutes | Cook for 20 minutes
Ingredients
- 1 tablespoon The Groovy Food Company Amber and Mild Agave Nectar
- 2 large free range eggs, separated
- 2-3 tablespoons The Groovy Food Company Agave Nectar Rich and Dark
- Groovy Food Company organic food spray with virgin coconut oil
Method
- Sift the flour into a bowl with the cream of tartar and add the powdered sugar.
- Make a well in the middle, add the egg yolks and pour in the yogurt.
- Mix gradually into a thick dough.
- Set aside while you prepare the bacon.
- Heat the grill to high and cook the bacon for 5-6 minutes, turning golden brown and crispy, set aside under foil to keep warm.
- When the bacon is almost cooked, beat the egg whites in a clean bowl until soft peaks form. Fold in the pancake batter.
- Heat a large non-stick frying pan and spray it with a little coconut oil to make a very thin layer. Drop dipped tablespoons of batter into the pan and cook for 2 minutes until set and golden brown on the bottom (you can check them), then flip and cook for another 1-2 minutes.
- Transfer to a plate to keep warm and cook the rest of the pancakes, adding more coconut oil if needed.
- To serve, pile up stacks of pancakes topped with avocado slices and crispy bacon. Sprinkle with dark agave and serve immediately.

Ingredients
- 2 tbsp. The Groovy Food Company Coconut Oil, Melted
- 1-2 tbsp. The Groovy Food Company Light Amber & Mild Agave Nectar
- 5 large bananas, 1-inch cubes (frozen overnight in a freezer bag)
- 2 tsp Groovy Food Company organic coconut flour
- 8 ice cubes (if you like it extra cold)
Method
- Peel and cut the bananas into 1 inch cubes and place in freezer bags and freeze overnight.
- Dissolve the coffee in water and let it cool.
- Put the bananas in a blender with the coconut oil, coconut flour, coffee, cocoa powder and agave nectar and blend.
- Once you’ve reached your desired consistency, place the ice cubes in the blender and continue blending until everything is combined. If you like it super smooth, let the blender run a little longer than normal.
- Pour into a glass and sprinkle with cinnamon to serve
Victoria Sponge Prescription

Ingredients
For the cake:
- 4 eggs
- 3 tbsp The Groovy Food Company Virgin Coconut Oil (melted and cooled)
- 350 g of natural yogurt
- 320 g spelled flour (sieved)
- 1 tablespoon of baking powder
For filling:
- 300 g of natural yogurt
- 100 g of raspberry jam
For decoration:
- A handful of fresh blueberries, raspberries and strawberries
- Finish with icing sugar
Method
- Heat the oven to 180 degrees and prepare/line two cake tins.
- Beat the eggs, mix with melted coconut oil and yogurt in a bowl until creamy.
- Add spelled flour and baking powder. Continue mixing until a dough forms.
- Spread the dough evenly between both pans.
- Bake for 20-25 minutes or until the surface is golden brown and a skewer inserted in the center comes out clean.
- Remove from the oven and cool for 5 minutes before removing from the pan and removing the paper. Set aside and cool on a wire rack.
- When completely cooled, spread the jam on top of the base cake. Then carefully add a layer of yogurt and sandwich on top of the cake.
- Garnish with fresh fruit and sprinkle with powdered sugar
Spicy sticky toffee sandwich cake Prescription

Ingredients
- 330 g unsalted butter, softened, plus fat
- 150 g of date syrup
- ½ tsp ground cinnamon
- ½ tsp spice mix
- 1 teaspoon bicarbonate of soda
- 225 g light brown soft sugar
- 4 large eggs
- 325 g of self-rising flour
- ½ tbsp vanilla extract
- 4 tablespoons of dulce de leche
- 90 g of soft cheese
- 300 g powdered sugar, sifted
Method
- Heat the oven to 180˚C, gas mark 4. Grease and line the bottoms of 2 x 20cm loose-bottomed cake tins.
- Place the date syrup in a saucepan over low heat. Stir in the cinnamon, spice mix, bicarbonate of soda and a pinch of sea salt until warm and combined. Set aside for 5 minutes.
- In a large bowl, use an electric mixer (or a free-standing mixer) to beat 180 g of butter with light brown soft sugar until pale and creamy. Beat in the eggs one by one and mix in the flour, vanilla and date syrup. When the mixture is smooth, divide the mixture between the pans and bake for 35-45 minutes, until a skewer inserted comes out clean.
- Leave the cakes in the pans for 10 minutes, then turn the dome side up onto a cooling rack. Spread 2 tablespoons of dulce de leche on top of one of the warm cakes – this will be the main cake – then let them cool completely.
- When it has cooled, make the filling. Beat the remaining 150g of butter with the soft cheese and powdered sugar with an electric mixer for 3-4 minutes until you get a smooth and creamy buttercream. Place the cake on a board or stand and spread half of the buttercream. Drizzle or pour 2 tablespoons of the dulce de leche over the cake, swirl it so that it also drips a little to the side, then top with the second cake.
- Spoon the remaining frosting over the cake and use the back of the spoon to create swirls. Drizzle over the remaining dulce du leche before serving.
