After a series of pop-ups, Kumori is going permanent

Earlier this year we wrote about the handroll trend taking over London and now we’ve got more info about one of the new spots opening in the capital.

Kumori, founded by Marc Flekei, started doing pop-ups last year, including at the Monaco Grand Prix, 1 Hotel Mayfair, and How Matcha in Marylebone. This spring it’s opening the doors to a permanent handroll bar in Soho, where the design, done by the same firm responsible for Kricket Shoreditch and Soma, has been inspired by Tokyo at sunset (kumori means “clouded light”). As well as looking pretty cool, it’ll sound good too with curated playlists coming out of a custom sound system.

The kitchen is being headed up John Randy De Guzman (ex-Tobi Masa) with Alvin Contawe (ex-Dinings and Roka) joining as senior sushi chef. Handrolls will be the main draw, made to order using bespoke extra-crispy nori, designed to keep maintain the structural integrity of the rolls. Varieties will include unagi foie gras, spicy tuna with jalapeno miso, torched scallop, baked crab, and toro with torched bone marrow, with a selection of nigiri and small plates rounding out the menu.
