Wine and vinyl bar Sova is opening in Notting Hill

Sova will be showcasing Eastern and Central European bottles

The team behind modern Slavic restaurant Zima is flipping its Notting Hill restaurant into a wine and vinyl bar specialising in wines from Eastern and Central Europe. Sova, opening in April, will have space for 40 across counter, table and street-side terrace seating, with the wine list curated by sommelier Cristian Vega. The focus will be on low-intervention and skin-contact wines, with bottles including a Ukrainian-style Brut, Georgian orange wines, a Serbian Pinot Grigio, a Hungarian Riesling, a Slovenian Malvasia and chilled reds from Bulgaria.

There’ll be Slavic-inspired sharing plates for you dip into alongside the wines, with the menu including dishes like:

  • slow-roasted peppers with anchovies and dill oil
  • beef tartare on Borodinksy bread with horseradish mayo
  • whisky and honey-roasted baby chicken with green salsa
  • crispy sea bass with fennel, grapefruit, garden peas and tarragon
  • miso-glazed duck confit with roasted Jerusalem artichokes and plum sauce
  • dark chocolate mousse with sea buckthorn
  • sour cherry & buckwheat crumble with cream
  • crème fraîche panna cotta with poached pear and bergamot

On the music front, Sova will boast a cracking vinyl selection, curated in part with Rough Trade, and play host to a mix of emerging and recognisable DJ talent throughout the week. With natural wine still lacking in natural wine, Sova should be a hit.
