    The Baring to Open in Islington | Eat and Drink | London on the Inside

    There’s an epic new pub coming to Islington, with a superstar team of Adam Symonds and chef Rob Tecwyn behind The Baring, which is opening in July. The pair met at The Bull and Last in Highgate 10 years ago and since then Rob has been head chef at some incredible restaurants including Dabbous and The Henrietta Hotel, as well as stints at Moro, Morito, and, most recently, senior sous chef at Kerridge’s Bar and Grill. Adam, meanwhile, spent five years at the helm at the Bull and Last, before moving on to the celebrated Notting Hill restaurants Orasay and Six Portland Road.

    With some serious hospitality experience behind them, The Baring looks set to be one hell of a neighbourhood local. Located on a quiet residential street between Islington and Shoreditch, just off Regent’s Canal, The Baring is going to offer quality food, low intervention wines and some very interesting beers from the UK’s best independent breweries. Sustainability, seasonality and provenance are going to be central to both food and drink menus.

    Sample dishes that are being revealed ahead of the opening sound right up our street:

    Starters: Smoked eel & pig’s head terrine, horseradish & daikon; Charred mackerel, gazpacho, courgette & basil; Quail shish, pul biber chilli & garlic yoghurt

    Mains: Roast gurnard, Roscoff onion & taramasalata; Grilled lamb rump, kofte, aubergine & shishito pepper; Ricotta gnudi, broad beans & nasturtium

    Desserts: Warm almond cake & Chantilly cream; Buttermilk pudding, strawberries & oats

    To drink, keg and cask beers will feature a rotating selection from the UK’s best small breweries including Burning Sky, Little Earth, Five Points, and Cornwall’s Harbour Brewing. There will also be a bottle list of more unusual sour, Saison, and spontaneous fermentation beers as well as wines from low intervention winemakers producing some of the most interesting, yet approachable bottles around. A short, sharp cocktail list, will offer classics mixed drinks made with London-based spirits and homemade cordials.
