That awkward time between Christmas and New Year when your house is filled to the brim with food but you’re too tired to put it together into a proper meal calls for one thing and one thing only – a picky tea.

Leftovers and random bits of food from the fridge, cupboard and freezer, a picky tea is an easy way to enjoy good food without the hassle.

But with it being Christmas, it seems only right to take your picky tea to the next level – but how?

We’ve got two recipes which will perk up your picky tea this Christmas.



Chip Spice and Chorizo Sausage Rolls

What you need:

  • One pack of ready-rolled puff pastry
  • 400g seasoned sausage meat (or six to eight deskinned sausages)
  • 50g chorizo (finely chopped)
  • Three tsp American Chip Spice
  • One large egg (whisked)

What to do:

1. Preheat oven to 200°C (Fan) and remove the ready-rolled puff pastry from the fridge at least five minutes before unrolling.

2. In a bowl, mix the sausage meat, chorizo and American Chip Spice.

3. Unroll the pastry, then cut it down the middle so you get two long strips. Take the meat mixture and place this along the middle of each strip of pastry.

4. Brush the whisked egg along the long edges of the pastry. From the top carefully roll the pastry over the meat so that the pastry overlaps at the bottom (the egg should make this stick together).

5. Cut into desired-size sausage rolls. Place these onto a non-stick tray and score the tops before brushing the top with egg. Sprinkle some American Chip Spice over the top.

6. Cook for 20 minutes until golden.

Savoury Chip Spice Cheese Scones



(Makes seven)

  • 210g self-raising flour
  • 1/2tsp Original American Chip Spice
  • One tsp baking powder
  • 50g unsalted butter
  • 100g grated reduced-fat mature cheddar cheese
  • One large egg
  • Enough milk to make 100ml in volume when combined with the egg

What to do:

1. Preheat oven to 190°C (170°C Fan).

2. Mix the flour (sifted), American Chip Spice and baking powder. Add the butter to the bowl and rub together to combine. Mix in 80g of the cheese

3. Whisk the egg and milk together in a separate bowl. Slowly add this to the dry ingredients to form a dough until it is firm. Retain the remaining egg and milk mix.

4. Lightly flour the work surface and roll out the dough until around 2cm thick. Cut the scones with a pastry cutter.

5. Line a tray with baking paper and distribute the scones evenly. Brush the tops with the egg and milk mix. Sprinkle the remainder of the cheese and a dusting of American Chip Spice over the top.

6. Bake for 15 to 20 minutes, or until risen and golden.
