Suzi-Mona Milne has joined the Green Michelin-starred Small Holding in Kent as a restaurant manager.
Milne, who studied Applied Linguistics at the University of Portsmouth, began his journey in hospitality at high street chains such as Côte Brasserie. He later became general manager at the King’s Arms in Prestbury, a 200-cover village pub and brasserie.
In 2021, he pursued his passion for wine to Tofino, Canada, where he became deeply involved in the industry. He later took on the role of Restaurant Manager at the Pointe Restaurant at the Wickaninnish Inn, a prestigious Relais and Chateaux property. There he successfully managed a team of 46 professionals.
Milne is currently completing his WSET Level 4 qualification.
At Small Holding, he reports directly to owners Will and Matt Devlin and takes responsibility for day-to-day restaurant operations. His tasks include managing the budget, overseeing recruitment and promoting team development.
Located in the village of Kilndown, The Small Holding is a unique establishment that includes a kitchen, farm and 36-seat restaurant. Since its establishment in 2018, it has been known for its distinctive homemade tasting menus.
From next month, prices for the Full Acre (eight-course) and Half Acre (five-course) menus will change from £85 to £95 and £65 to £75 respectively. This decision reflects the need to accommodate “price increases for producers and suppliers”.
