Chicken curry is the ultimate comfort dish, and luckily, with the right recipe, it’s easy to prepare. Mary Berry’s One Pan Spiced Chicken Curry isn’t just delicious; it’s also ideal for those who want to whip up a home-cooked dinner quickly without having to crowd over the stove.

You only need to spend about 10 to 15 minutes preparing this dish before popping it in the oven to roast for 45 minutes. The mild flavor makes this curry a great choice for a family dinner that both kids and adults can enjoy, and since everything is cooked in one pot, you have a lot less washing up to do later.

In her Book “Family Sunday Lunches”, Mary notes: “This curry is fragrant and not hot, just a wonderful combination of flavours. If it’s heat that you like, add more chilli,” reports the Express.

Here’s how to whip up Mary Berry’s Spiced Chicken Curry:

Ingredients:

  • 12 boneless and skinless chicken thighs (approximately 1 kg)
  • Four cloves of garlic
  • Three onions
  • Two red peppers
  • A red chili
  • Six centimeters of fresh ginger
  • Three tablespoons of sunflower oil
  • Half a teaspoon of ground cloves
  • Two tablespoons of mango chutney
  • Two and a half tablespoons of curry powder
  • Three tablespoons of tomato puree
  • Salt and pepper

What you need for your kitchen:

  • Large ovenproof casserole dish with lid
  • Food processor (optional)

Instructions:

Prepare your vegetables. Coarsely chop onion, ginger, red pepper and red chili.

Cut the chicken into strips, season with salt and pepper, then heat in oil in a large frying pan. Cook the chicken in two batches until golden, then transfer to a plate and set aside. Then throw the chopped onion and pepper into the pan and fry them for three to four minutes.

Purée the garlic, chilli and ginger in a food processor to create a paste. If you don’t have a food processor, you can also use a knife, garlic press or mortar and pestle. Then add this paste to your frying pan with the onions and peppers, followed by the spices. Return the chicken to the pan and stir well to ensure it is well coated with the spice mixture.

Now add the rest of your ingredients to the pan and season with salt and pepper. Boil the mixture, cover it with a lid and put it in the oven. Let the curry cook for about 45 minutes or until it is tender.

When it’s ready, take it out of the oven and voila! Your delicious homemade curry is ready to be served.
