We’ve teamed up with Kolamba Soho for a proper hands-on masterclass where you’ll learn to make hoppers from scratch – those crisp-edged, bowl-shaped pancakes that somehow go with everything.
Kolamba showcases Sri Lankan home cooking as it’s eaten across the island. Bold spices, deeply layered curries, fragrant rice and freshly made roti, all designed to be shared. Hoppers (also known as appa/appam) are a Sri Lankan staple: thin and lacy at the edges, soft and slightly spongy in the middle, and just as good at breakfast as they are at dinner.
So, once you’ve got the batter and pan technique down, you’ll sit down to eat your hoppers with a spread of curries. You’ll also make your own sambol – that punchy, spicy condiment you’ll want on everything – to take home. Come hungry. Leave with skills (and sambol).
Tickets to the masterclass cost £25 and include the session led by hospo pro and food developer Niroch Fernando; your hoppers to eat with a choice of Ceylon chicken, young jackfruit curry or red monkfish curry with dhal, pol sambol and rice; your own sambol to take home; and 30% off the next time you dine at either Kolamba locations.
