Hummus is one of the most versatile foods to include in your diet as it offers endless culinary inspiration and is a healthy snack that we can enjoy every day.

But did you know that you can do lots of weird and wonderful things with hummus? If you’re new to vegetarianism or thinking of ways to use up hummus in the fridge, look no further than these creative recipes.

1. Red pepper muffins with hot pepper 

Who said hummus was boring? These pepper muffins really pack a punch and make a great on-the-go breakfast or afternoon snack.

Makes 8 

INGREDIENTS:

  • 3 tablespoons of flax seeds
  • 8 tablespoons of warm water
  • ¾ cup vegetable milk
  • 1 tablespoon of hot pepper sauce
  • ½ cup red pepper hummus
  • 1 ¼ cup all-purpose flour
  • 1 teaspoon of baking powder
  • ½ tsp salt
  • 1 cup of grated non-dairy cheese
  • A little olive oil

INSTRUCTIONS:

  1. Preheat the oven to 200 C / 400 F.
  1. In a small bowl, mix the flax seeds with water and let stand for 5 minutes.
  1. In a large bowl, mix the milk, flax seed mixture, hot pepper sauce and hummus together in a bowl. Beat until smooth.
  1. In a separate bowl, mix together the flour, baking powder, salt and cheese.
  1. Pour the dry ingredients into the wet and mix. The dough should be quite wet.
  1. Grease the muffin tin and pour the mixture evenly into it.
  1. Bake at 200/400 degrees for 25-30 minutes or until the muffins are golden brown.

2. Hummus and broccoli soup 

Hummus? In soup? We’re not kidding. This creative blend is the perfect winter warmer, offering a twist on traditional flavors.

Serves 4 

INGREDIENTS:

  • 2 tablespoons of olive oil
  • 2 sticks of celery, finely sliced
  • 1 clove of garlic, crushed or chopped
  • 400 g chopped broccoli
  • 1 liter of vegetable broth
  • 1 handful fresh mint, chopped
  • 2-3 tablespoons of hummus

INSTRUCTIONS:

  1. Gently fry the celery in the oil for 2-3 minutes, then add the garlic and fry for another minute, stirring.
  1. Add the broccoli and cook for another minute, stirring.
  1. Add the stock, cover and bring the soup to a boil and let it simmer for 7-8 minutes or until the broccoli is soft.
  1. Remove from heat and add mint.
  1. Let cool for a few minutes before roasting.
  1. Mix in the hummus and serve warm.

3. Hummus and sweet corn fritters 

Looking for distinctive appetizers or side dishes? These hummus and sweet corn patties do not disappoint.

Makes 12 

INGREDIENTS:

  • 2 tablespoons of flax seeds
  • 6 tablespoons of warm water
  • 60 g plain flour
  • 1 teaspoon of baking powder
  • 1 teaspoon dried chili flakes (optional)
  • 100 ml soy milk
  • 100 g of frozen sweet corn kernels
  • 3 thinly sliced ​​spring onions
  • A handful of fresh coriander, roughly chopped
  • 150 g sweet onion hummus
  • Oil for frying

INSTRUCTIONS:

  1. Mix the flax seeds and water in a small bowl and let stand for 5 minutes.
  1. In a separate, larger bowl, mix the flour, baking powder and chili, if using.
  1. Mix non-dairy milk and flax mixture. Mix well.
  1. Add sweet corn, spring onions, coriander and mix the hummus into a dough. Season to taste.
  1. Heat the oil in a frying pan over medium heat. When the oil is hot, drop in the mixture a tablespoon at a time and cook for about 3 minutes on each side or until browned. Serve with chutney.

4. Hummus Kiev Burgers 

Liven up your Wednesday meal with these delightfully crispy Kiev burgers. This recipe is perfect for the whole family.

Makes 4 

INGREDIENTS:

  • 4 tablespoons of olive oil
  • 1 small onion, chopped
  • 1 fresh green chili, finely chopped
  • 1 garlic clove, peeled and minced
  • 400 g canned chickpeas, drained
  • 1 teaspoon ground cumin
  • ½ tsp smoked paprika
  • 1 large handful of cilantro, mint or parsley, chopped
  • Juice of one lemon
  • Salt and pepper
  • 1-2 tablespoons of tahini
  • 4 tsp hummus – any flavor
  • Some plain flour

INSTRUCTIONS:

  1. Gently fry the onion and chilli over medium heat in half the oil until soft and translucent. Add the garlic and fry for another minute, stirring.
  1. Roughly mash the chickpeas with a fork and add them to the onions along with cumin and paprika. Cook, stirring, for another 3-4 minutes.
  1. Add the chopped herbs and lemon juice and season well.
  1. Stir in the tahini to bind the mixture. It should be sticky and hold together, but not wet. Let cool for a few minutes.
  1. Make a small lemon-sized ball of the mixture in the palm of your hand. Press until it holds together well. Then make a hole in it and put 1 teaspoon of hummus in the dip and cover it again. Then press into a hamburger shape. Repeat for all burgers.
  1. Sprinkle some flour on them and fry the rest of the oil on medium heat for 5-7 minutes on each side.
  1. Serve hot.

5. Hummus pizza 

The best thing about hummus? It goes with almost anything – and this hummus pizza recipe is proof of that.

INGREDIENTS:

  • Pizza base
  • 2-3 tablespoons of hummus
  • Favorite side dishes: roasted vegetables, olives, capers, artichokes, asparagus, tomatoes, mushrooms, peppers
  • Non-dairy cheese, grated

Fresh basil

INSTRUCTIONS:

  1. Assemble your pizza by using hummus instead of tomato sauce.
  1. Add your favorite toppings and sprinkle cheese on top.
  1. Cook for 8-10 minutes or according to package instructions.
  1. Sprinkle fresh basil on top.
