On Tuesday 26 November, Big Mamma will host chefs Francesco Martucci and Diego Vitagliano from two Top 50 Pizza pizzerias for a charity dinner at Gloria Trattoria in Shoreditch.

The event raises funds to support the projects of the Italian humanitarian organization INTERSOS, which provides assistance and protection to unaccompanied minors separated from their parents in conflict zones.

At dinner, Big Mamma’s head chef Filippo La Gattuta’s antipasti and dolci are served, as well as seven pizzas prepared by guest chefs. Pizzaiolo is presented by Andrea de Michele, head pizza chef of the Big Mamma Group.

Francesco Martucci’s pizzas
Futuro di Marinara: roasted tomato cream, caiazzane olives, anchovies, orsino garlic pesto, Salina capers and oregano

Saturnia: roasted tomato cream, DOP Campana Buffalo mozzarella, soy-fermented black garlic foam, caiazzane olive powder, Salina caper powder, crispy onion, red tuna bottarga, Fontana Lupa extra virgin olive oil.

Le 7 consistenze della cipolla: a new dough innovation topped with onion cream, fermented onion, crispy onion, blackened onion, onion mayonnaise, onion gel, onion jam, Fior di latte mozzarella.

Diego Vitagliano’s pizzas
Abra-ciami: double crunch pizza, smoked provola, smoked Angus carpaccio, sweet paprika, fleur de sel, arugula and charred mayonnaise.

Che Cavolo: black cabbage cream, Cantabrico sea anchovies, walnuts with turmeric and fried black cabbage leaves.

Coupé di testa: leek in butter, Fior di latte mozzarella, cuvé pepper, Coppa di testa and papaccelle cream.
