The Pacific fusion bar and restaurant concept is set to open in Edinburgh next month.

Cabo, which is part of Bow Hospitality, will be the 12th venue overall and a location in the Scottish capital.

Inspired by the lifestyle and culture of the party peninsula of Mexico, Cabo brings the flavors of the Pacific coast to Scotland.

Cabo operates seven days a week from lunch until late, in the former Superico location at 99 Hanover Street. After careful consideration, the 70-seat restaurant chose this central location in Edinburgh to offer casual dining throughout the day, complete with a live sushi bar.

Cabo diners can expect a modern menu that combines the flavors of Baja California with Japanese and Mexican influences. Highlights include ceviche sharing plates, softshell tacos and 60-day dry-aged Scottish steak.

The venue is currently undergoing a complete makeover, with decor inspired by the beach vibes of Cabo San Lucas. Playful design elements, art installations, cacti, terracotta, stone decorations and abstract illustrations depicting Cabo’s famous landmarks create a lively and festive atmosphere.

Live DJs are available from Thursday to Sunday and have a wide range of cocktails served from the bespoke bar.
